About Us: Dornoch Distillery was born out of a successful crowdfunding campaign, driven by the philosophy of bringing old-style distillation techniques back to life. Our founders, brothers Phil and Simon Thompson, established one of the world’s leading whisky bars in Dornoch before venturing into distillation. Since 2017, we’ve crafted and laid down over 700 casks of Dornoch New Make Spirit, while also releasing independent bottlings of rum and Scotch Whisky, World Whisky and Brandy.
