Job Title: Fresh Services Manager

Requirements:

· Passion for food

· Minimum 3 years’ experience in catering

· Production planning

· Range maintenance and expansion

· Ordering

· Stock taking

· Waste management

· Costings – computer capture and verification

· Hygiene compliance

o Recipe batch control

o First In, First Out

o Legislation

· Price maintenance

· Suppliers

o Compliance

o Deals

· Staff management

o Disciplinary code

o Off duty scheduling

o Health & Safety

· Ability to communicate well with individual customers

· Able to manage staff and be a general worker

· Ability to handle pressured periods – seasonal / events

· Passion for training staff

· Understanding GP’s and the target for each department gross and net

· Ability to resolve problem areas

· In possession of a Matric Certificate

· Prepared to work shift work, and public holidays

· In possession of a valid driver’s license
