Requirements:
• 2-3 years previous Sous chef experience in a 4/5-star Lodge / Wine Estate environment (Essential)
• Running the day to day operation of the kitchen in the absence of the Head Chef
• Assist with the training and development of junior chefs and scullers
• Manage the pass during breakfast, lunch and dinner service
• Ensure consistency of food quality and presentation at all times
• Assist in Menu compilation and recipe development. Possess an in-depth knowledge of the whole menu and kitchen operation
• Maintain recipe standards and enforce adherence to recipes and methods of preparation
• Knowledge of dietary requirements and ability to offer menu alternatives, meet with guests to discuss same
• Support the management team to ensure food cost targets are met
