The position is part of the project ‘microTexture: Unlocking the Secrets of Plant-Based through Investigations at Multiple Scales’ founded by the Novo Nordisk Foundation.

About the project
The development of many sustainable foods is hindered by their inability to mimic texture from conventional foods. The structure of foods, as of any other materials, is hierarchically organized differently at different length scales (molecular-micro-macro). While the connection between microstructure and texture becomes more evident, the knowledge of how they are connected is still missing.
